Here is an original recipe for it :

List of ingredients

  • 1 kg of beef bourguignon
  • 200 g of bacon
  • 1 kg of carrots
  • 1 onion
  • 2 cloves of garlic
  • Bouquet garni
  • 3 tbsp cornstarch or maïzena
  • 2 tbsp sugar
  • 500 g of button mushrooms
  • 1 kg of potatoes
  • 75 cl of Burgundy wine

Steps of the recipe :

  1. Heat some olive oil in the casserole dish
  2. Brown the pieces of meat for a few minutes and set aside
  3. Brown the bacon and set it aside with the meat
  4. In the casserole, fry the onions and the minced garlic for 5 minutes
  5. Add the chopped carrots, for 6 to 7 minutes, just enough time to sweat them
  6. Add the sugar, then the cornstarch or maïzena
  7. Pour in the red wine, the bouquet garni (bay leaf, thyme) and when it starts to simmer, add the meat and bacon
  8. Cover, lower the heat and let simmer for 2 hours
  9. After 2 hours, add the potatoes and mushrooms, add a little water if the wine has evaporated too much
  10. Let simmer for 1 hour. Serve the next day, it's even better reheated !
